I am a snacker...
Starting to feel good today. It’s not hard to eat the right
stuff. It’s just hard to NOT eat the wrong stuff. All I want to do today is
Snack!! I wanted to snack on bacon after breakfast, and almonds before & after lunch. All kinds of random stuff after dinner. At least it was all good for me, just a tad obsessive & excessive. It is getting easier day by day
though.
Today for breakfast, we made ___________________. I don’t know what to call it, but it was very good. Very easy recipe. Just take the tops off the tomatoes, and pull
out all the inside stuff. I put them in
a muffin pan to stabilize them. Crack an egg (or 2) into each tomato and top
them with sea salt, pepper & chives.
Bake at 425 for about 30-45mins. While that is cooking cut up and cook
about 3 strips of bacon (whole30 approved for me). When the eggs are done, top
them with bacon & salsa.
The baked egg in tomato looks really good! Love seeing your Paleo ideas and recipes.. makes me want to try a Paleo recipe one day! Would love to see Paleo desserts!!
