I am a snacker...

Whole30 Day 6

Starting to feel good today. It’s not hard to eat the right stuff. It’s just hard to NOT eat the wrong stuff. All I want to do today is Snack!!  I wanted to snack on bacon after breakfast, and almonds before & after lunch. All kinds of random stuff after dinner.  At least it was all good for me, just a tad obsessive & excessive.  It is getting easier day by day though.

Today for breakfast, we made ___________________.  I don’t know what to call it, but it was very good.  Very easy recipe.  Just take the tops off the tomatoes, and pull out all the inside stuff.  I put them in a muffin pan to stabilize them. Crack an egg (or 2) into each tomato and top them with sea salt, pepper & chives.  Bake at 425 for about 30-45mins. While that is cooking cut up and cook about 3 strips of bacon (whole30 approved for me). When the eggs are done, top them with bacon & salsa.













For supper, I put a roast in the crock pot all day. I shredded the roast and made lettuce tacos. Topped with gac, salsa and jalapenos.

  1. The baked egg in tomato looks really good! Love seeing your Paleo ideas and recipes.. makes me want to try a Paleo recipe one day! Would love to see Paleo desserts!!
