Whole30 Days 1-5
The hardest part of any journey is getting started......
On Jan 1, Regan & I started the Whole30. We are doing the Whole30 verses just strict Paleo, because we need a reset. We need to change the way we think about food. Change our habits & cravings. After our 30 days, we are going to stay Paleo (which we generally have done for the past year).
Here is an overview of the Whole30 program:
Day 1 - This day was pretty easy. Usual eggs & veggies for breakfast. I had a huge salad from whole foods and leftovers for dinner.
Day 2 - I am feeling pretty good today. I even got a PR on my Shoulder Press at CrossFit!!! I don't think I owe this to 2 days of clean eating, but it sure helped kick it off!!
I made homemade tomato soup. Diced tomatoes, chicken broth, peppers & onions, garlic, and Italian seasoning (all to taste) Bring all to a boil. Remove from stove and I used my ninja to puree the soup. This is very easy and simple!

Day 3 - I had a headache most of the day. It could have been busy day at work or my body adjusting. For supper I made Apple butter BBQ Drumsticks. http://blog.stuffimakemyhusband.com/2012/08/apple-butter-bbq-drumsticks-slow-cooker.html These are so tender and the chicken just falls off the bone after being in the slow cooker. We had asparagus on the side.
Day 4- I had leftovers for lunch and Regan had a simple salad with grilled chicken. For supper I made zucchinni noodles. I used Whole30 approved sausage and added fennel seeds. Diced tomatoes, coconut milk and garlic and simmered until it was creamy. Once creamy, I poured over the zucchinni noodles! So good and filling. This is just something I randomly made up for supper. I tend to do that often, because I am not really good at following recipes and always make my own "version" of recipes.
Day 5 - We had eggs & Whole30 approved bacon for breakfast. We went to CrossFit. The WOD for the day was Cobb. Regan did Cobb and I actually made up the WOD from Thursday, Randy. 75 power snatches for time. I had a pretty decent time. I don't know if it was a PR or not ,as I cant find my previous times. But I will take my time and be happy with it! It was pretty chilly outside, so I was craving some soup. For lunch, I made Coconut Thai Chicken Soup. The soup was very good! and I made enough for us to have for leftovers Sunday
Overall, I feel great! Days 2-4 I was feeling pretty tired and and had a headache. On these days, I tried to take it easy at night and go to bed early. I find it easier to cook & plan a head of time. We do have emergency meals from Pre-Made Paleo if needed, however we only plan to use those for lunches we aren't prepared for. I haven't had many cravings, except for the dozen krispy kreme doughnuts brought into my office at work! Ha..... I just stayed out of their way so I wasn't tempted.
