Coconut Macaroons gone astray......


Last Sunday, I attended my first ever cookie exchange at Katie's House! It was a lot of fun! Each of us brought about 3-4 dozen cookies to share with everyone. We laid them all out and labeled our cookies. Before we left, we each went around the table and got a few cookies of each kind to take home and share.  There were a lot of just fabulous yummy cookies.

My cookie to bring was going to be Paleo Coconut Macaroons!  Yes, you can go to a Christmas party and still bring something Paleo to share with friends & loved ones, and people not know any different!

However, I think I messed up somewhere! The receipe only made 8, so I did it times 5 and may have ended up with not enough honey and too much egg whites - as my mixture wasn't sticky and wouldn't hold in a ball shape.  So I decided to lay it out and make macaroon bars.  I baked them and then tried to cut the bars..... Ultimate fail! They didn't stick either. Ugh! But tasted fabulous, even though they look a little crispy on the coconut, but it was so good! Haha...

I put them in the fridge to sit over night and the next day was able to cut them into somewhat bars. 


So, for the cookie exchange, I brought no bake peanut butter chocolate cookies. They were yummy, but not Paleo! Oh well, Maybe next time :)

Paleo Coconut Macaroons

  1. In a medium bowl, whisk together egg whites and honey with a fork
  2. Briefly whisk in salt, then stir in coconut flakes
  3. Place bowl in fridge to chill for an hour
  4. Fill a 2 tablespoon scoop with batter, so it’s heaping full
  5. Using your hand, firmly pack batter into scoop so it is level
  6. Release batter onto a parchment paper lined baking sheet
  7. Bake at 350° for 10-12 minutes, until macaroons are golden brown
  8. Cool for 1 hour and serve

This is what they should have looked like..... maybe next time!

  1. Would have loved to try the original cookies, but was sort of excited that you brought no bakes instead, they are my faves!!!
