Paleo Date Night!

Regan & I have been learning about Paleo for about 9 months now and this week was the first week we have offically been strict at it. It has been a great week and we feel great! Tonight is date night and usually order Dominos Pizza... But we decided to make Paleo Fish Tacos. I got the receipe from http://cosmopolitanprimalgirl.wordpress.com/

Here is the receipe:

Ingredients (serves 2):
- 2 pieces of Mahi Mahi – or any white flaky fish
- 1/2 head of Green Leaf Lettuce
- 2 Tbsp Olive Oil
- juice of 1 lime
- 2 Tbsp cilantro – chopped
- 2 tsp chili powder
- 1 jalapeno pepper – chopped
- 1 tomato or 10 cherry tomatoes – chopped
- 4 green onions – chopped (optional)
- guacamole

Directions:

1.In a small bowl mix olive oil, cilantro, chili powder, jalapeno and lime juice. Pour over fish and marinate for about 20 minutes or more.
2.You can either grill the fish or pan fry it – leave the marinate on the fish while you cook it. We grilled the fish

3.While the fish is cooking, mix together the chopped tomato and green onion.
4.Once fish is finished cooking, flake it apart. Put the fish into the lettuce wraps and top with tomato/onion mixture and some guacamole.
5.Enjoy!
